Old-style and cozy decor in this osteria in Rome’s Via Casilina, not in the immediate city centre but easy to reach with a 20-minute bus ride from Termini station. Located in the Via Flaminia Vecchia not far from Ponte Milvio, Il Quinto Quarto is not in the immediate city centre. Appreciated by the regular customers especially for their great fried calamari and hand-sliced potatoes. Here you won’t find a chef-style gourmet cuisine but more of a homemade, Italian mom/grandma type of food. At Zampagna All’Ostiense you will find some of the best food to eat in Rome when it comes to non-touristy authentic local cuisine. Fares are pretty reasonable, so if your concern is the food prices in Rome, this is a place to try in the lovely Ostiense neighbourhood.

Sciascia’s close proximity to the Vatican makes it an even more compelling spot to grab a cup of coffee. The wrought iron tables outside and sophisticated coffee room with old wooden decor and marble floors of the 1920s create a warm ambiance.

You'll find a mix of locals and international gastronome-types seriously perusing Armando el Pantheon's the menu, deep in contemplation, one assumes, of the feast to come. Kick things off with a bruschetta topped with tomato and milky burrata cheese, then move on to a plate of fettuccine pasta with porcini mushrooms, or stick to the old Roman favorite, cacio e pepe . Come mains, the chargrilled lamb chops, if they have them, are bite-sized pieces of meaty goodness. At Assaggia, executive chef Daniele Ciaccio’s tasting menu is essentially a hit parade of Roman classics, reinvented as tapas-sized bites. The six-courser spans everything from platters of local cheeses and fiori di zucca to a peppery carbonara and creamy beef meatballs in a thick tomato sauce. If you're the more adventurous type, ask one of the ever-cheerful staff for the menu of extras, which includes an excellent Roman tripe cooked with tomatoes and pecorino.
Just keep in mind that they may not have these flavors on the day you visit. Last time I went there, I was distraught to see there was no Bounty, but the helpful woman behind the counter managed to find some in the back for me. They did have a salted caramel flavor, though, which also looked good. It’s a coconut-milk-based gelato that is out of this world.

During roasting, aromatic oils and acids weaken, changing the flavor; at 205 °C (401 °F), other oils start to develop. One of these oils, caffeol, is created at about 200 °C (392 °F), which is largely responsible for coffee's aroma and flavor. The next step in the process is the roasting of the green coffee. Coffee is usually sold in a roasted state, and with rare exceptions, such as infusions from green coffee beans, coffee is roasted before it is consumed. It can be sold roasted by the supplier, or it can be home roasted. The roasting process influences the taste of the beverage by changing the coffee bean both physically and chemically.
With over 270 years of history, Gilli was established by a Swiss family changing locations in the center before finally ending up in the coveted corner it calls home today in Piazza della Repubblica. For those who might think of these newer places as a threat, think not, for this only encourages the coffee culture to itself improve in sourcing blends and types, both ethically and sustainably.
